High, here I can kill two birds with one stone: practice using the KeyNote canning program I just installed as now while offering another dish at the lower end the cooking scale.

Raclette au Micro-onde
needs:
Raclette potatoos
(or baby potatoos that you don't have to peal)
Raclette cheese
(or another cheese)

Methord:
Place potatos in plastic container, no water needed, close container, place container in microwave, set at full power for 5 minutes, switch on, walk away and start slicing the cheese, return once the microwave goes ping, test potatos with a toothpick, another minute if they are not soft enough yet but, if they are, remove container, hand out dishes to the kids, have them place one or two potatos on a dish with a slice of cheese on top, which they then cook in the microwave at full power for another minute while their father lays the table and turns off the television.

(Ok, now how do I get this to the thread then, is it just cut/paste which I have done or is there a better way with this program.)

This is similar to Bob Evan's House dressing but even BETTER. :tazz:
I think it is the best salad dressing in the entire world! :)
My mother in law ran a country restaurant for 30 years and this
was her house dressing, all the customers LOVED it.



MARY'S CELERY SEED
SALAD DRESSING

2/3 cup sugar
1 tea. dry mustard
1 tea. salt
1 small onion
1/3 cup vinegar

1 cup canola oil
1 tea. celery seed

Mix first 5 ingredients in blender until smooth; very very slowly and gradually add the oil with the blender on medium.
Add celery seed, give one fraction of a
second whirl......

This is my FAVORITE chili recipe...it makes a BIG batch! :tazz:

Top Secret Recipes
version of
Wendy's® Chili

from Janie :)

2 pounds lean ground beef
One 29-ounce can tomato sauce
One 29-ounce can kidney beans (with liquid)
One 29-ounce can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
1/2 cup diced green chili (2 chilies)
1/4 cup diced celery (1 stalk)
3 medium tomatoes, chopped or 15 oz. can diced tomatoes
2 teaspoons cumin powder
3 tablespoons chili powder
1/2 teaspoons black pepper
2 teaspoons salt
2 cups water

1 Tbl honey (the only thing I added differently)


1. Brown the ground beef in a skillet over medium heat; drain off the fat.
2. Using a fork, crumble the cooked beef into pea-size pieces.
3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.

Then pour into a crock pot on high for about 2 hours or low for three or more hours.

Grated cheese on top of servings is optional.

Makes about 12 servings.

Tidbits

For spicier chili, add 1/2 teaspoon more black pepper.
For much spicier chili, add 1 teaspoon black pepper and a tablespoon cayenne
pepper.
Leftovers can be frozen for several months.

JANIE'S HOMEMADE VEGETABLE SOUP


1 # beef (like chuck) Cook in crock pot covered with water on high for about 5 hours....

Let cool and lift off fat...shred beef in little pieces to add to soup as the last item....

Soup ingredients:

1 # diced carrots
3 stalks diced celery
3 cups diced potatoes
1/2 head cabbage cut in small pieces (approx 1 # )
1 cup diced onions

Cover and gently cook the above in about
8-10 cups of broth (and water) until tender.....

Then add:
12 oz. can Freshlike corn, undrained
13 oz.can cut green beans, undrained
14 oz. can diced tomatoes, undrained
1 8 oz. can of tomato sauce
2 teaspoons of salt and 1/4 tea pepper.

Bring to boil....
Add a 10 oz. pkg. of frozen peas and cook as directed
Add the shredded beef last....

This is really good vegetable soup like my Mom made on the
farm while we were growing up....It is yummy served with whole
wheat bread with homemade strawberry jam and a glass of 1% milk.

Are you a poor yet hungry student, well try spagioli.

One tin of spagheti bolognese, mix in one tin of ravioli. Add some garlic salt if you have any. Feeds two but one is always better and the combination makes a meal better than the two individual ones. Best thing is it takes 5 mins and just eat it from the same dish.

Thats student food.

You can also have uber cheese on toast, get some nice outsiders, branston smooth, cheese and some sliced up pepperami mix and apply over top of the outsiders(toasted but not to toasted) Then grill for five mins. mmm another student meal totally unacceptable to modern soceity and the cooking community.

Breakfast au Micro-onde

Alright, you're probably laughing again, but when you don't know and put an egg straight into the microwave, there is the explosion and the cleaning up of the mess, so I suggest scrambling the eggs when dealing with the microwave, two eggs , salt/paper, etc., in a mug is enough, full power one and half minutes, done. So much quicker than boiling them, so much cleaner than frying them, since one can eat out of the mug.

Coffee au Micro-onde
Sorry, instant coffee here but the idea is to have something to drink with the eggs meaning breakfast, half a mug of water boiled for a minute, add coffee and milk.

Toast, your thinking that the two can't be done together because the timing is different, well that is where the toaster comes in handy because ajusts the toaster to one minute, tells you the water has boiled.

Result: breakfast in less than two min

Here is one my favourite quick snacks. It is a variation on the cheese on toast one. After you have put the slices of cheese onto the toast and before grilling, chop up finely a segment of fresh root ginger (the amount varies as to your taste), and place on top. Just grill as normal until the cheese has melted and enjoy.

SPAGHETTI PIE

6 oz. Spaghetti (break in half & cook as directed on pkg in salted water)
1 Tbl oil and 1 Tbl butter (melt in microwave)
1/3 cup grated Parmesan cheese
1 egg, beaten

Drain spag....Mix above ingredients and shape into a 'pie shell'
in a glass, deep dish pie pan. (Spray dish first with cooking spray like Pam.)

Microwave for 3 minutes, uncovered

1 cup cottage cheese, mashed OR 4 oz grated Mozarella cheese
Spread this on top of spaghetti shell.

1/2 pound lean ground beef
1/2 tea salt and a little pepper
1/4 cup chopped onion
1/4 cup green pepper (optional)

Brown above ingred together, drain off any grease
Add 1 1/2 cups of your favorite spaghetti sauce;
any brand will be fine. Heat through.

Spread this meat mixture onto the spag pie shell.

Cover with 4 oz of grated Mozarella cheese

Microwave for 60-90 seconds, uncovered,
or until the cheese is melted.

This is FUN to make and very YUMMY. :tazz:
It is good served with corn and a salad.

HOBO DINNER

1 lean ground beef patty, 4 oz.
Salt and pepper the beef
(A pork chop or chicken breast can be substituted.)

1 nice sized potato, scrubbed and sliced
1 big carrot, peeled and sliced
(or 3 oz baby carrots, sliced once lengthways.)
1 small onion, sliced (or about 1/3 of a big onion)
Lightly salt and pepper the vegetables

1 Tablespoon Catsup
1 Tablespoon water

Place hamburger patty in center of a large piece of foil.
Slice layers of potato, carrot and onion over hamburger.
Sprinkle catsup and water over all.
Seal edges carefully.

Make one for each person.
Put on a cookie sheet.

Heat oven to 400 degrees, then turn down to 350 degrees
Bake for 1 hour and 15 mins.

FUN TO MAKE AND GOOD TO EAT.

Fried mac and cheese

when you have left over mac and cheese just set it in the fridge overnight to let it set, make your standard frying batter of choice (flour dredged through eggs...or whatever) and fry the sucker.....sounds unhealthy...because it is...but that means it tastes great

Oh my goodness, 'dsenette', that IS a lot of fat.

Maybe you should try my HOBO dinner above.
It would be a whole lot HEALTHIER.
You could make SEVERAL for leftovers. :tazz:

pffftt.....if i could find a way to keep it from melting in the fry-daddy...I'd eat fried butter...healthy schmealthy.....I'm gonna die at some point...might as well enjoy the ride....and make it hard for them to carry the casket

POP TARTS

Open box
remove Pop Tarts from foil
insert into toaster on a low setting for about a 2 minutes
be careful when removing them from the toaster, they will be hot!
devour the Pop Tarty deliciousness! ^_^

I reckon you are one of those fellows that would like
fried Snicker candy bars? :)

They actually sell them at our county fair!

It is a good thing you are not MY husband....because I cook
healthy....only time we eat fried foods is if we are at a fast food
restaurant and want some greasy french fries...

At home, they are BAKED FRENCH FRIES. :tazz:

i have a recipy for baked french fries.....and i do eat healthily regularly....but....i do not pass up anything with grease, butter, cheese, sour cream, or any combination of the above
